Kentool Srl began in 2013 the cultivation and milling of grain sorghum in Lombardy maintaining a short supply chain process for maximum convenience.
It was dedicated special attention to the fact that all the various collection and production phases were pristine gluten.
Periodically a specialized laboratory analyzed Kentool flour for the control of the absence of gluten. Thanks to this practice, the procedure for the inclusion of flour in the AIC was completed in 2015.
In 2015 it also began the cultivation of pea protein and the subsequent pressing of the same for the production of flour which was followed in the course of 2016 that of sweet lupine and faba bean.
